Week 6: Fall Salads for the week before Thanksgiving
With heavy feasting coming up, it’s a good idea to keep your meals light and nutritious for this week. Here are 3 of my favorite fall salads to meal prep that will keep you filled up without overdosing food before the big day!
Fall salad seems like an oxymoron. After all, salads are served cold and fall is the time to get cozy with soups and stews! We tend to think of salads as a summer time dish. (This Watercress and Mandarin Orange Salad is a perfect example.)
But don’t rule salads out just yet! With just a few tweaks you can end up with a fall extravaganza full of squash, apples, pears, pomegranates, figs, nuts, and grains.
Especially this week before Thanksgiving. You’re going to be eating so much next week. (Not to mention all the cooking!) Take a break this week and keep it light and quick and simple.
Fall Harvest Roasted Butternut Squash and Pomegranate Salad
Fall salads are a perfect excuse to stuff more squash into your meals. (Honestly, what isn’t a good excuse to stuff more squash into your meals?) Use a heartier leaf as the base so it can withstand heavier squash too.
Half Baked Harvest has some of the most delicious and loaded salads out there and this Fall Harvest Roasted Butternut Squash and Pomegranate Salad is no different! It’s chock full of fall flavors to make you feel nearly as cozy as you would with a soup.
Apple Pistachio Quinoa Salad
If you’re still not feeling cozy enough, try adding some grains to your salad to bulk it up. Grains fit in naturally with fall flavors and fruits. And they add an extra layer of heartiness to fill up after a chilly walk home from work!
Chelsea’s Messy Apron has created a remarkably easy salad. (Her toddler helped, so it really is that easy.) It’s full of every fall flavor you can imagine.
Autumn Pearl Couscous Salad
Of course, if leaves are just too summery for you, switch them out for a pasta like couscous! Salads don’t always have to be only leafy-green, especially this time of year.
The Little Spice Jar has an excellent example in her Autumn Pearl Couscous salad. It’s hearty and full of delicious fall flavors and nutritious veggies. So it counts as a healthy dish too, right?
